Grapefruit and Shrimp Salad
Don't forget the avocado for this one. Grapefruit is seasonal in the winter for us Northerners but avocados can be hit or miss in the winter. I saw that avocados were on sale the other day and so this week we are eating quite a few! One of my go to salads is this one. It is a great tasting, healthy solution to eating lighter. It is the best with ripe avocados and for those not so hip on seafood, substitute chicken. When the avocados are ripe but the grapefruit is not in season, utilize the jarred grapefruit. Win Win!

I can't believe we don't have much on this site with this fantastic olive oil. This should be a staple in all pantries since it has a great combination of herbs that enhance just about everything. Maybe not cake, but I do love Rosemary in my olive oil cake so, we may get there yet! All of us have comfort food and this is a great recipe to memorize for last minute dinner or when trying to impress dinner guests. It is simple yet fancy enough to serve for special occasions. And the left overs will be taken to re-heat at work. Herbes de Provence is such a versatile oil.
