It's that basil harvesting time of year and so I hope that those of you who plant basil every year are harvesting what's left and drying it for use all winter. Here in Boise, basil is an annual unless you have a green house. I just dried the last bit of mine and am having a hard time not using it up! Which leads me to Olivin Basil olive oil. It is so full of basil flavor that it enhances all of those dishes we use basil leaves for. This recipe layers the basil flavor in the chicken and then both basil leaves and Olivin basil olive oil can be used on the side dish you serve with it.
