We are back at it! With all of the chaos of 2020, this blog was neglected and thus we have a bit of a gap
in our recipes. We are excited to have Pamela's Catering on our team this year and some of these fabulous recipes will be from her long experience serving Boise events, parties and weddings. This recipe is one of hers. Make mom feel extra special this year with this fruitilicious, edible, beautiful centerpiece! And don't forget the Balsamic!!
Bacon Apple Spinach Salad
This fabulous salad is the fall version of the basic spinach salad with bacon. Spinach is the backdrop for this luscious, go with everything salad that let's you enjoy fall's bounty of apples at their peak of ripeness.
Corn Chowder with Poblano Pepper
This fall favorite is great in the crock pot or when you are roasting the end of season corn and peppers. We like it best when blended smooth but it is called "chowder" so leaving the chunks and blending some of it works well too. The roasting takes some time which is usually done one day as a preparation and then the ingredients are ready to make the chowder. This makes a fun addition to Green Chili Enchiladas too.

It's that basil harvesting time of year and so I hope that those of you who plant basil every year are harvesting what's left and drying it for use all winter. Here in Boise, basil is an annual unless you have a green house. I just dried the last bit of mine and am having a hard time not using it up! Which leads me to Olivin Basil olive oil. It is so full of basil flavor that it enhances all of those dishes we use basil leaves for. This recipe layers the basil flavor in the chicken and then both basil leaves and Olivin basil olive oil can be used on the side dish you serve with it. Which speaking of sides, try this easy gourmet tasting side when in a pinch. And feel free to substitute the oils we mention in the recipe with others to compliment the flavor profile you are going for! Enjoy!

Peachy Keen Caprese Salad
This twist on a favorite; eat all of the time snack, appetizer or side with steak/chicken (caprese salad) is a great end to the summer bounty. Peaches are at their juiciest and sweetest at the end of August here in Boise Idaho. After enjoying tomatoes and basil over the last month, let's add paeches. Now that the peaches are "in", what do we do with a box or two?? We have some strange sounding match-ups that will have those boxes empty before any are able to start needing to be cooked in jam or pie.
Put them on Caprese Salad...I kid you not. Peach and basil are great together!
Spicy Hummus (substitute Lemon or Garlic for the milder palettes)
These are for you who are adjusting to online school with the kids and the college kids heading to online school and the workers heading to online work with the online schoolers in the next room...these appetizers/snacks will still fill you up but are simple and quick and adaptable to all of the new schedules. These add comfort and goodness in an ever-changing world!!
