It's that basil harvesting time of year and so I hope that those of you who plant basil every year are harvesting what's left and drying it for use all winter. Here in Boise, basil is an annual unless you have a green house. I just dried the last bit of mine and am having a hard time not using it up! Which leads me to Olivin Basil olive oil. It is so full of basil flavor that it enhances all of those dishes we use basil leaves for. This recipe layers the basil flavor in the chicken and then both basil leaves and Olivin basil olive oil can be used on the side dish you serve with it. Which speaking of sides, try this easy gourmet tasting side when in a pinch. And feel free to substitute the oils we mention in the recipe with others to compliment the flavor profile you are going for! Enjoy!

This twist on a favorite; eat all of the time snack, appetizer or side with steak/chicken (caprese salad) is a great end to the summer bounty. Peaches are at their juiciest and sweetest at the end of August here in Boise Idaho. After enjoying tomatoes and basil over the last month, let's add paeches. Now that the peaches are "in", what do we do with a box or two?? We have some strange sounding match-ups that will have those boxes empty before any are able to start needing to be cooked in jam or pie. Put them on Caprese Salad...I kid you not. Peach and basil are great together! |
